vegetables | quick fling pasta

I am almost embarrassed to include this because it's so simple! But it's a great dish to make when you've come home late or feel frazzled. It's also a great supper to make if good friends are visiting, which allows you time to enjoy their company rather than disappear into the kitchen never to be seen again.

Wheat free, dairy free, nut free, meat free version...

Method...

  1. Start cooking the pasta according to instructions.
  2. Heat the oil, add the tomatoes and cook for a few minutes.
  3. Add the sun dried paste, balsamic and wine/water and heat through.
  4. Drain the pasta, stir into tomato mixture.
  5. Serve with chives (and nuts if using) sprinkled on top and freshly milled black pepper.

Maybe serve with...

This is delicious served on its own, but you could add a side salad if you wished or make a wheat free garlic baguette.

For those who can eat wheat...

This is an excellent sauce if you want to eat a half or completely wholewheat pasta because the sundried tomato paste is strong enough to balance the rather more robust taste of the wholewheat! Once again, it is also lovely with some wheat garlic bread.

If you have leftover tomatoes, try the simple ratatouille, salsa and the fajita feast
