miscellaneous | baked red cabbage

Serves 4 as a side dish

This is a lovely, easy, healthy way to serve cabbage.

  1. Heat the oven to 150°C
  2. In an oven proof dish with lid (or foil the top) layer the apple and cabbage (and onion, if using).
  3. Bake for an hour, stirring occasionally to break up the apple.
  4. Season with salt and pepper and serve.

This is gorgeous with dishes such as the herby sausages, quick mushroom parcels, a canoe of courgette with sweet pepper sauce, cottage pie and rice towers drizzled with warm tomato vinaigrette.

If you have cabbage leftover, try the cottage pie, the Mediterranean skewers, the nude skewers and the mushroom provencal. If you have cooking apples left, try the baked apples or apple crumble. If you have red onion, see the nude skewers.
