miscellaneous | quick potato salad

Serves 2-4

This is another incredibly easy side dish or picnic/buffet dish. And handy to have for a quick supper or lunch too.

Wheat free, dairy free, nut free, meat free version...

  1. Boil the potatoes until cooked.
  2. Drain and leave to dry.
  3. Mix the spring onions and mayonnaise together in a bowl, add the potatoes and stir until reasonably evenly distributed.

This is gorgeous with the aubergine caponata, the pepper paprikash and the mango pepper boats.
