miscellaneous | creamy spring onion and cucumber dip

Serves 2-4

This is a great little multipurpose dip! It can be quite hard to make dairy/egg free food taste creamy without it being really obvious that something is missing. Silken tofu has quite a distinctive taste and I admit that sometimes I can only eat it in small doses because it can be a bit overwhelming, but in this dish it blends brilliantly with the other ingredients - so much so that people aren't able to tell its egg free. The other advantage, of course, is that silken tofu is also cholesterol free.

Maybe serve with...

This is delicious with a mixture of crudités as a snack or part of a picnic/buffet. It makes a great companion to aubergine caponata. It's also gorgeous with fajitas, multipurpose salmon and salmon croquettes. And you can also use it as a garnish with pepper paprikash.

For those able to eat dairy ...

You can use cream cheese instead of the silken tofu.

For those able to eat wheat...

This is delicious served in wheat tortillas with mixed peppers and/or salsa.

For those who can eat meat...

This is a great dip to serve with a simple chicken salad.
