For those who can eat meat...
Par cook the potatoes in a beef stock or chicken stock for 10 minutes, then cook in the oven for 20 minutes or until crisp.
If you have potatoes left, see dauphinoise potatoes, the mashed potato and the rosemary roast potatoes.
