meat and fish |tuna salad with black eyed beans

Serves 1-2

Ever need a quick and nutritious meal that can be made in a few minutes - here you go.

Wheat free, dairy free, nut free version...

Ingredients...

Dressing:

Method...

  1. Mix the drained black eyed beans and tuna in a large bowl.
  2. In a second container, mix the ingredients for the dressing.
  3. Pour over the bean/tuna mix and stir in.
  4. Leave to infuse for around ten minutes (optional), then arrange on a bed of watercress.

Maybe serve with...

Fresh boiled new potatoes, French beans cooked and tossed with flaked almonds, or a side serving of pasta. If you are in more of a rush, you could just add other salad ingredients which don't need to be cooked.

For those able to eat wheat...

A bagette of French bread, torn into chunks, would be equally as good.

For those who can eat dairy...

You could accompany the dish with slices of cheese of your choice.

If you have tuna leftover, see aubergine caponata, mushroom and herb provençal, griddled tuna, seared tuna with sun blush tomato and olive dressing or quick herby tomatoes. If you have red pepper, see mango pepper boats and red pepper pesto pasta. If you have spring onions, see the creamy dip, fajita feast, Tom's fantastic risotto or salsa.
