Fresh boiled new potatoes, French beans cooked and tossed with flaked almonds, or a side serving of pasta. If you are in more of a rush, you could just add other salad ingredients which don't need to be cooked.
For those able to eat wheat...
A bagette of French bread, torn into chunks, would be equally as good.
For those who can eat dairy...
You could accompany the dish with slices of cheese of your choice.
If you have tuna leftover, see aubergine caponata, mushroom and herb provençal, griddled tuna, seared tuna with sun blush tomato and olive dressing or quick herby tomatoes.
