This is delicious on its own as a light supper, or with some new potatoes.
For those able to eat dairy ...
You can substitute the salmon for some chunks of cheese. A smoked cheese works really well. Smoked applewood cheddar is especially lovely, but just use whichever cheese you prefer. Alternatively, you could serve the salad with a selection of cheeses.
For those able to eat wheat...
Serve with thin slices of wholemeal bread and butter (or non-dairy spread) instead of the potatoes.
For those who can eat meat...
Add strips of cooked chicken (and cheese, if you wished) to the salad instead of salmon. Or serve the salad without salmon, and instead serve with toasted bread and pate.
If you have potatoes, salmon and smoked salmon leftover, try the easy salmon croquettes.
