Method...

  1. Mix together your salad leaves and any optional salad items of your choice, in a large serving bowl.
  2. Dry fry the pork until browned and cooked through.
  3. Combine the dressing ingredients, add to the pan and stir together.
  4. Pour over the salad and serve.

Maybe serve with...

Freshly cooked new potatoes or a side serving of pasta, hot or cold

For those able to eat fish ...

A darker fish, such as mackerel, could be used as a substitute for the pork, though I would be tempted to use freshly cooked sardines.

For those able to eat wheat...

Roughly ripped crusty bread would be ideal

If you have pork leftover, see the coconut lamb or pork. If you have salad ingredients leftover, see Mediterranean skewers, multi-purpose salmon, grapefruit chicken, easy salmon croquettes(with simple crushed raspberry coulis), seared lamb with quick mint dressing, spicy chicken thighs, cheat's lasagne, a canoe of courgette with sweet pepper sauce and a savoury twist on afternoon tea. If you have herbs leftover, see mushroom provençal, Nanny Dot’s cawl, carrot and coriander soup, speedy chicken parcels and lightly spiced chickpea burgers.
