meat and fish | grapefruit chicken

Serves 2

This is so easy, it's ridiculous. You can make it more elaborate if you wish, by adding a stuffing inside the chicken breasts.

Wheat free, dairy free, nut free version...

  1. Heat the oven to 160ºC
  2. Put the chicken in an ovenproof dish.
  3. Divide the grapefruit segments between the chicken pieces and arrange on top.
  4. Drizzle each serving with 2 tsp of the honey and cover with foil.
  5. Cook for approximately 30 minutes depending on the size of the fillet, then take the foil off and cook for 5-10 minutes.

Maybe serve with...

I serve this on a bed of rice with vegetables or a salad for a quick supper.

For those able to eat wheat...

You can always make a wheat-bread stuffing with herbs and/or nuts and seeds, and fill each piece before baking.
